  • 4 skinless chicken thighs (or chicken breasts)

  • 1 cup chickpeas, drained and rinsed
  • 1 cup chicken stock
  • 1 preserved lemon, chopped
  • 1 cup green olives
  • 1 teaspoon ras el hanout
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro and parsley for garnish
  • Couscous or pearl couscous for serving

Instructions

  1. In a tagine pot or dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent.
  2. Add the chicken thighs to the pot and season them with salt, pepper, ras el hanout, cumin, and paprika. Brown the chicken on all sides.
  3. Once browned, remove the chicken and set it aside. In the same pot, add the sliced carrots and chickpeas, stirring to combine.
  4. Return the chicken to the pot, placing it on top of the vegetables. Add the chopped preserved lemon, green olives, and chicken stock.
  5. If using a tagine, cover with the lid and let it simmer on low heat for about 1.5 hours. If using a dutch oven or crock pot, you can also cook it on low heat for the same time, or use a slow cooker for a more hands-off approach.
  6. For a quicker method, you can use an instant pot, cooking on high pressure for about 20 minutes, then naturally release the pressure.
  7. Once the chicken reaches a tender texture, taste and adjust seasoning if necessary. The sauce should be aromatic and flavorful.
  8. Serve the Moroccan chicken tagine over couscous or cauliflower rice, garnished with fresh cilantro and parsley.
