  • 2 medium sweet potatoes
  • 1 can black beans, drained and rinsed

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large tortillas
  • 1 cup jack cheese, shredded
  • 1 avocado, sliced
  • Fresh cilantro (optional)
  • Lime juice
  • Salsa for serving
  • Sour cream for topping

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Peel and dice the sweet potatoes. Place them on a rimmed baking sheet lined with parchment paper.
  3. In a large bowl, toss the sweet potatoes with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Roast the sweet potatoes in the oven for about 20-25 minutes or until they are just tender.
  4. While the sweet potatoes are roasting, heat a skillet over medium heat. Add the diced red onion and bell pepper, sautéing until softened. Add the black beans and cook until heated through. Remove from heat.
  5. Once the sweet potatoes are done, combine them with the black bean mixture. Drizzle with a squeeze of lime and mix well to combine.
  6. To assemble the burritos, lay a tortilla flat and place a generous scoop of the sweet potato and black bean filling in the center. Add some shredded jack cheese and slices of avocado on top.
  7. Fold in the sides of the tortilla and roll it up tightly from the bottom, ensuring the filling is secure. Repeat with the remaining tortillas.
  8. If desired, wrap each burrito in plastic wrap for meal prep or refrigerate for later use.
